Place the shallots and garlic in a mortar and pound into a paste. Transfer to a mixing bowl and add the lemongrass, fish sauce, soy sauce, salt, and sugar. Stir well. Add the pork chops to this mixture and marinate for 30 minutes.
Preheat a grill to medium heat
Just before serving, grill or pan-sear the meat over medium heat until done, 5 to 7 minutes on each side. Serve with steamed rice, sautéed vegetables, and the ginger-lime dipping sauce.
