Kẹo Mè Xửng
VẬT LIỆU VÀ CHUẨN BỊ (Ingredient And Preparation)
- 1 cup đường cát trắng
- 1/2 cup mè chà vỏ rang vàng
- 2/3 cup đậu phụng rang vàng, lột vỏ
- 2/3 cup nước lạnh
- 2 muỗng canh bột năng
- 1 muỗng canh nước cốt chanh
- 2 muỗng canh dầu ăn
- 1/4 muỗng cà phê vani
- 1 cái khuôn,vuông hay tròn tùy thích
CÁCH LÀM VÀ TRÌNH BÀY (METHODS)
1/ Bột năng đem hòa với 1/2 số nước (1/3 cup) khuấy đêù để đó.
2/ Khuôn thoa dầu cho đều, cho 1/2 số lượng mè rắt đều, còn 1/2 phủ mặt trên.
3/ Bắt chảo lên bếp, lấy một muỗng canh dầu đổ vào, tráng đều cho đến khi chảo ráo dầu, đổ nước còn lại (1/3 cup) và đường vào, khuấy luôn tay, xem đường gần tới thì cho 1 muỗng canh chanh vào. (Cách thử đường tới, lấy chiếc đũa nhúng vào chảo đường, xong nhỏ giọt đường bám trên đũa vào một ly nước lạnh nếu đường không bị hòa tan, mà đóng thành cục, bốc ra được thì đường đã tới rồi đó, nhanh tay không thì bị khét đó nghe.)
4/ Ðường tới độ 10 phút thì cho bột năng đã hòa nước vào từ từ, khuấy luôn tay không thì bị sít đó.
5/ Khi nào nhìn thấy bột trong và thấy cứng tay thì bột đã chín rồi, cho đậu phụng và vani vào, nhắc xuống khỏi bếp.
6/ Cho hỗn hợp vào khuôn đã lót mè sẵn, xong cho số mè còn lại lên mặt. Ðể nguội, cán đều cắt ra từng miếng, bọc giấy kiếng.
Kẹo dẻo thơm ngon, tuy đòi hỏi kinh nghiệm. Nhưng bảo đảm là không phải vất vào thùng rác, bởi vì có bị tổ trác chăng nưã nó cũng dẻo ngọt và thơm vậy. Ăn thua là cái độ dẻo của nó thôi. Thiếu chanh hoặc đường tới quá thì kẹo cứng nhai trẹo quai hàm thôi. Còn ngược lại thì kẹo dẻo quá mức yêu cầu, mau mau đem vào tủ lạnh cho nó cứng lại chút đỉnh. Lúc cho chanh vào rồi thấy chuyển sang màu vàng là cho bột vào ngay chớ có chần chờ nó khét ngay không kịp cụ cựa. Theo kinh nghiệm cho thấy thì nên lót dưới khuôn một lớp giấy nhôm bọc luôn lên vành miệng, vì lúc đổ hỗn hợp con đang nóng vào sẽ dính vào khuôn, do đó rất khó lấy ra khỏi khuôn. Lúc cắt ra từng miếng dao nên thoa dầu cho khỏi bị dính. Không biết còn gì để nói thêm nữa không. Chắc là cạn ráo rồi. Chúc các bạn thành công.
